(Almost Fat-Free) Strawberry Cheesecake Protein Crunch Pops

It’s late at night, the dessert bug has struck, and you’re at a standstill. Do you dare head into the depths of the eerily dark kitchen to grab the ice cream…or better yet, the fresh baked brownie you have sitting on the counter that you saved from your office work party. The light from the freezer illuminates the kitchen as you stand there frozen in front of it thinking to yourself how much you NEED something sweet. In fact, it’s become so necessary that bedtime is literally not going to happen until you satisfy your sweet tooth. You’re mind is telling you nooooo, but your body, your body is telling you yesssss….

What do you do? Well, I’ve made that decision quite simple for you. Strawberry. Cheesecake. Protein. Crunch. Pops. So delicious I felt it necessary to emphasize every word of it. The best part? These are HEALTHY. Not just disguised as healthy…truly HEALTHY. I digress…

Here’s the recipe for these awesomely delectable protein sweets:

Recipe yields 6 popsicles. A popsicle mold works great, but cups with a good old fashion popsicle stick stuck right in also works as well.

  • 4 oz. fat free cream cheese
  • 1 cup non fat plain Greek yogurt
  • 2 Tbsp almond milk
  • 1 scoop vanilla protein powder
  • 1-2 tsp lemon juice (to taste)
  • 1 cups fresh or frozen strawberries
  • 2 graham crackers, crushed
  • 1-2 Tbsp Stevia or sugar alternative, to taste


Blend together all ingredients except for strawberries and graham crackers until smooth consistency. Then, add in strawberries and pulse. You’ll want to the strawberries to have a slightly chunky consistency. In the meantime, take popsicle molds and sprinkle in graham cracker crumbles into the bottom of each one. Pour in strawberry cream cheese “batter”. Freeze for 1-2 hours or until frozen.
